Scotched Eggs with Parmesan cheese

Ever had a Scotch Egg?

Hard boiled egg encased in bacon rolled in almond flour and gently fried to a golden brown and crisp, they are a surprising treat to serve at brunch.


  • 4 hard boiled eggs, peeled

  • 2 large eggs, whisked

  • ¼cup Parmesan cheese

  • ¼cup almond flour

  • 8 slices bacon

  • 1 tablespoon keto compliant oil

  • 2 tablespoons melted coconut oil


  1. In a bowl, combine the Parmesan cheese and almond flour. In a separate bowl, whisk the eggs, with a pinch of salt if pre-ferred.

  2. Wrap the eggs with 2 slices bacon per egg, one slice horizontally, one vertically.

  3. Heat the olive oil and coconut oil in a skillet.

  4. Dip the wrapped eggs into eggs, then Parmesan mixture, shake off the excess.

  5. Place the eggs into heated oil and fry until fully browned, all sides.

  6. Transfer the eggs onto paper towels to drain.

Serve after.
